Today, its a salad thats an ode to summer!
And similarly it is with theNuoc Chamsalad dressing that Im using here.
And that is no exaggeration!
And the most wonderful thing about this salad, like mostVietnamese food?
Its light and fresh and yet SO GOOD it doesnt even register that its actually incredibly healthy!

Vietnamese cuisine treats herbs almost as a vegetable itself, such an essential part of the foods they are!
Chinese cabbage on the other hand is good to eatfrom the dress-go.
The texture is somewhere between traditional stiffer green cabbage, and soft leafy greens.
I leave it for use instir friesandnoodles.
Here is how I cut the cabbage: Two slits then finely shred.

So you wont be starving 30 minutes after eating this.
Its actually a filling meal.
