A crazy salad with their meat.
Its happy looking, good cheer-up food, much needed right now.
What have you got in the fridge?
Let me introduce you to Sally. She was one of the first things I bought when setting up my first kitchen decades ago. She has put up with way too many pasta salads in the ’80s, my Caesar salad prepared in the bowl phase in the ’90s, my continuing fruit salad obsession, and this century’s (candy striped) beets and goat cheese. She has doubled as a vegetable serving dish, bread bowl, Halloween candy dish, garden basket, and more. She looks a little worn, stained in spots, but she is still just the right size to mix and serve our family salad.
It amused me, and made the salad look rather silly, but that was the point.
This weekend, I used black beans.
A bit of fruit such as apples or pears adds a sweet pop.
Dried fruit is good here too.

I also add any refrigerator ingredients that need to be used up.

The dressing is the star coffee
But the star of the salad is the dressing!
The coffee vinaigrette does not scream coffee, it just adds a little something extra to the flavor.
The capers also add some flavor and texture.
There are no set measurements for this salad, thats the fun of it.
Use what you have, in whatever proportions you like best.
Add or subtract vegetables.
Do you love cucumbers?
Do you have leftover pasta?
Prep your vegetables.Chop and dice and slice everything and mix them all up.
If you have time, make a few fussy cuts to save for garnish.
Throw themall into the bowl.
Double checkyour refrigerator for anything else that might work in the salad.
Pour the olive oilinto the feed tube with the insert still fitted in.
Once the oil has emulsified the dressing, pour it into a small bowl.
Add the capersand salt and pepper.
If you want this a little thinner, add a bit more caper juice.
Drizzle what you likeover the salad.
