Light a fire
So I light a fire and make soup.
Its a good day for it.
This is his kind of day.
Ill add them back in at the end.
Cauliflower is a good stand in, as is potato, or rutabaga.
Cream of Broccoli and Mushroom Soup
Cut the florets off the broccoli stems into bite-sized pieces.
Chop up the stems and set aside.
Slice the mushrooms and place in the bottom of a stock pot with some olive oil.
Cook until brown on one side, then turn and add the broccoli florets.
Continue cooking just until the broccoli is tender and the florets a vibrant green.
Add a bit more olive oil to the pan and toss in the onion, celery, and carrot.
ensure the vegetables are covered.
Add a couple cups of the milk of choice, warm, taste and season again.
If you want your soup to be totally pureed, toss it all in before you blend.
I like it with some texture, but to each his own.
Make as directed, but fully puree everything to nice and smooth, adding the zest of a lemon.
Chill for several hours, then serve with a squeeze of fresh lemon juice!
Now, the fire needs another log.
Its going to be a long, cold night.
