I personally wouldnt recommend making Creme Brulee using imitation vanilla essence.
Egg yolks This gives Creme Brulee its velvety mouthfeel as well as making the custard set.
(I always think,Its diluting the cream!, which actually makes absolutely no sense .)
Dont whisk more than necessary as this creates air bubbles.
Small ramekins holding around 150ml / 23 cup are an ideal size this is what I used.
I applaud this clever move we all love that toffee top, its the best part!
Dont go any higher than this otherwise the ramekins will float around in the water!
Bake 35 40 minutesor until the custard looks and feels set but still wobbles when you (gently!)
You should not be able to cut through it like cake!
It should melt in your mouth like a rich, velvety cream.
It shouldnt even have the texture of soft jelly!
It will then quickly harden as it cools.
Heaven in a ramekin!
